FoodRecovery.org is tackling food waste and food insecurity at extraordinary scale, recovering 1 million pounds of food every week with a small but mighty remote team.

As Large Donation Program Manager, Ellen Schoenberg helps move everything from fresh produce and meat products to disaster relief shipments across the country. Recently, their warehouses have been stocked with significant donations of potatoes. So naturally, when asked to share a recipe, Ellen turned to a crowd-pleasing staple: roasted rosemary potatoes.

Recipe: Roasted Rosemary Potatoes

Ingredients

  • 2 lbs small potatoes

  • 3 tbsp olive oil

  • 3 cloves garlic, smashed

  • 2–3 sprigs rosemary (or 1½ tsp dried)

  • Salt & pepper, to taste

  • Optional: pinch of smoked paprika

Instructions

  1. Preheat oven to 425°F.

  2. Halve potatoes if large, keep small ones whole.

  3. Toss with olive oil, garlic, rosemary, salt, pepper, (and paprika if using).

  4. Roast 35–45 minutes, flipping halfway, until crispy.

  5. Serve hot.
